About Us

The Australian Whisky Academy was formed to promote the history and build an understanding of the whisky. There are many sources of information available about this fantastic spirit, but the AWA is focussed on using an easily accessible educational approach to promote a deeper appreciation of whisky.

About the Founder

Our founder Andrew has developed his appreciation of whisky, in particular single malt whisky over a number of years. He is inquisitive about the entire process of distillation and the industry and has had the benefit of visiting many distilleries around the world. Andrew holds a certification in Scotch Whisky, has a background in education and has built a collection of whiskies from around the world. Andrew does not claim to be an expert in whisky, rather he is keen to develop his understanding of the spirit, the process and appreciate the effort put in by distillers.

Whisky Is For Everyone

Whisky is a drink that can be enjoyed (responsibly) by all. Your journey is a personal one and may take time to develop. You may be drawn to the rich oak flavour with a Sherry cask finish, or your may have a desire to explore peated (smokey) whisky. You may prefer a few drops of water, neat or on the rocks. There are no rules, just be open minded and explore this wonderful spirit. To explore this spirit, you must fist understand where it has come from.

Discover The Process of Whisky Making

There are three key ingredients needed to make Scotch Whisky. Although the ingredients may seem simpled, the technique, quality of each component and the skill of the distiller can separate good whisky from great whisky.

01 Water

The quality of the water used is absolutely critical and can impact the finished product revealing the brine of Islay or particular minerals in the water.

02 Barley

The use of malted barley that contains the right enzymes and chemical compound is essential. This cannot be too dry, too wet, too course or too fine.

03 Yeast

The use of yeast is critical in the process of fermentation. Yeast is a living thing and when the yeast 'eats' the sugar created int he wash, the product is alcohol, in very basic terms.

We explore all of these processes in detail and you too can build your knowledge and awareness of the core elements as you explore Scotch Whisky.

The Fundamentals

Distilled in Scotland, from malted barley, from a single distillery, aged for more than three years in American or European Oak.

Irish Whiskey is whiskey distilled and aged in the Republic of Ireland or Northern Ireland.

Gin is a white spirit normally distilled from a grain and draws is distinctive flavour from juniper berries which are typically grown in northern Europe.

Historically Canadian Whiskey was made with a corn base and now include rye grains.
